Polarbröd, one of Sweden's biggest bakers, is exhibiting its enormous variety of bread products at the World Travel Catering & Onboard Services Expo in Hamburg.
By "shock freezing" its products just after baking and delivering them frozen, Polarbröd does not use preservatives in its products and is able to supply its airline customers with bread that remains fresh for up to 5-7 days after being thawed.
According to its industry export manager Catrine Millbert, the company is exhibiting to meet in-flight caterers in order to have its bread distributed with airline meals.
She says that after Scandinavia, Polarbröd's next biggest market is France and its products are sold in 18 other countries. Able to make products to order, it has a range of approximately 100 different breads produced in three bakeries in Sweden, one of which is appropriately located in a village named Bredbyn, pronounced "bread bin".
Millbert says that many of Polarbröd's products have achieved the Scandinavian Green Keyhole label, signifying that it is low-salt, low-sugar, low-fat and high-fibre. She says that these products are becoming more and more popular with its airline customers such as Scandinavian Airlines, which is trying to make the products it uses in flight "as ecological as possible".
