Modular Galley Systems is presenting its Induction Heating Unit as the only galley equipment that already meets the requirements of Arinc 810 and 812, hosted at the Tyco Electronics stand.


Induction heat offers similar cooking advantages to gas – fast and direct heat, without the flames.  Induction coils made of copper are integrated into the heating layers and generate an alternating magnetic field.  This creates eddy currents which transfer the heat.


The heat is directly generated and will heat the ‘casserole dish’ gently as the oven remains cold.  This means short heating cycles and meals can be ready in less than ten minutes.


What does this mean for in-flight catering?  Meals can be prepared freshly, and the heating box is both a frying pan and casserole dish in one.  Because the induction heat works quickly steaks or fish can be prepared on the spot to order.
